Recipes are healthy, quick to make and most importantly taste good no matter who is sharing your table. Did you know that halloumi is one of the best cheeses around to eat? It contains as much calcium as other cheeses but half the calories so I always make sure we have a pack in the fridge.
Ingredients:
Halloumi
Panko breadcrumbs
Flour
Lemon
Yoghurt
Fresh mint
Method:
Cut halloumi into finger sized pieces. Heat a shallow pan with a little oil, cover your halloumi first in flour then breadcrumbs ( I use panko) then cook for a few minutes each side. Meanwhile grate the skin of one lemon into a few spoons of yoghurt and stir through some chopped mint. This is also great finger food for babies and the yoghurt works really well if you want to add in a little variety.
