Chicken with Canellini Beans, Bacon and Savoy Cabbage

Chicken with Canellini Beans, Bacon and Savoy Cabbage. Another family pleasing one pot! So rich in flavour, yet light on your purse. A speedy midweek meal with minimal washing up.⠀⠀⠀

200g smoked bacon lardons⠀⠀⠀
1 onion finely chopped⠀⠀⠀
2 garlic cloves crushed⠀⠀⠀
4 chicken breasts skin on⠀⠀⠀
400g can of cannelini Beans⠀(drained)
100ml white wine⠀⠀⠀
Chicken stock⠀⠀⠀
Savoy cabbage⠀

Season your chicken breasts, drizzle over some olive oil then place them skin side down in a hot pan. Once the skin has coloured and crisped remove and set aside.⠀⠀⠀
To the same pan add the bacon & onion. Colour for 10 minutes of so. The onion should be translucent and the lardons coloured.⠀⠀⠀
Add the garlic and the white wine. Bubble for a couple of minutes before adding the stock and the cannellini beans.⠀⠀⠀
Nestle the chicken breasts in the bean and bacon mix making sure the skin is not submerged.⠀⠀⠀
Simmer for 20 mins before removing the chicken breasts and stirring through the shredded cabbage.⠀⠀⠀
Simmer for 5 more minutes before returning the breasts to the pot and serving.
