Turkey meatballs in tomato sauce

Homemade meatballs are quick and easy to make. We make a double batch and freeze the second half.

Ingredients:

400g Turkey mince x 2
1 onion, finely chopped
3 garlic cloves, finely chopped
1 tbsp garlic granules
1 tbsp onion powder
1 tsp dried oregano
Fresh parsley, finely chopped
2 tbsp breadcrumbs
Salt & pepper to taste
For the sauce:
2 tin chopped tomato
1 minced garlic
1 chicken stock pot
1 courgette finely chopped/handfuls frozen pepper

Method:

Gently fry the onion until soft, add the chopped garlic and fry low. Once softened, add to large mixing bowl and allow to cool. Add the mince, garlic granules, onion powder, oregano, parsley, breadcrumbs and seasoning. Mix well. Roll into small balls. Fry in oil in large frying pan until the balls are browning all over and sealed. Add the two tins of tomato, garlic, chopped veg and stock pot. Mix and allow to simmer gently until all cooked through. Serve with pasta/spaghetti and fresh herbs.
