Thai inspired Chicken Meatballs

Serves 4
Ingredients:
500g chicken mince
4 spring onions – finely sliced – halve them lengthways then finely chopped
1 blade of fresh lemon grass – tough outer leaves removed & finely chopped
1 red chilli – finely chopped
2 cloves garlic – crushed
1 tsp grated ginger
1 tbsp finely chopped coriander
3 kaffir lime leaves – finely chopped
1 egg
2-4 tbsp breadcrumbs
3 tsp soy sauce
3 tsp sesame oil
2 tsp fish sauce
2 tsp honey
Salt & pepper

Chilli & mint to serve – optional

Method:
Chop everything up as finely as possible particularly the lemon grass. Mix everything together in a bowl and roll into golf ball sized balls. If the mixture is too wet then add more breadcrumbs. Chill in the fridge to firm up.

Place a pan on the hob until hot. Sauté the meatballs on a medium to high heat in a nonstick pan. Try not to turn them prematurely to ensure a golden crust. Now keep turning until cooked through. You may need to turn the heat down.

Serve with Jasmine rice and green veg.
