This is a great breakfast or post work-out snack.
Feeds 4 (or 2 very hungry people)
Pancake Batter
4 eggs
45g flax seeds
2 Scoops Protein Powder*
*We use a vanilla one and Nuzest Clean Lean Pea Protein. If you have a natural protein powder you will need to add a teaspoon of vanilla essence.
Topping suggestions
Berries of choice
Greek Yoghurt of choice
honey or maple syrup
Handful of walnuts
dusting of cinnamon
Method
Add pancake ingredients to a bowl and mix (we use a hand electric Wisk)*
*If batter too thick you can add a bit of milk or water (I use Almond Milk) (No need to rest this batter it is fine to use straight away)
Add Coconut oil to pan and allow pan to heat up well.
Scoop two ladle of batter into fryling hot pan to form two small pancakes (or one if pan small) Wait for bubbles to appear on mixture (a minute or so) and flip. Don’t worry if you flip too early and it collapses a bit, just pull together and leave for a little longer. Continue to flip until happy with colour each side. (@4 minutes)
Serve with toppings of your choice: We use High Protein Greek Yoghurt, Maple Syrup, Warmed through frozen berries or fresh blueberries, a dusting of cinnamon and a sprinkle of organic walnuts.
