A meat free option from our clever friends at Simply Nutritious Delicious
- 1 tsp mustard seeds
- 1 tbsp curry powder
- 1 tsp turmeric
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 onion finely chopped
- 1 garlic clove finely sliced
- 1 cauliflower cut into florets
- 300g cubed butternut squash
- 250g red lentils
- 400ml almond milk
- 1 red chilli finely sliced
- Fresh coriander
- Half a lemon
Heat 1 tbsp oil and add the mustard seeds. After 1 minute add the onion and garlic and sweat for 5 mins before adding all the remaining spices, half of the chopped chilli, the squash, cauliflower, and almond milk. Add 100ml water and stir. Simmer for 20 minutes adding more water if the curry becomes dry. Season squeeze in the lemon juice and serve with fresh coriander and the remaining chilli.
Serve with rice or Naan but because of the lentils this dish is filling enough by itself.
